Ostrich, alligator & venison sliders, oh my

Housed in an old Dogpatch warehouse, Gilberth’s Rotisserie & Grill is a spankin’ new opposite-of-North-American eatery grilling up tasty exotic fare in a modern industrial setting with poured concrete floors, a 14-seat steel communal, and a giant mural titled “Big Black Rooster” done on a copper sheet, presumably mounted to the wall with throbbing caulk.

Sourcing its meats from nearby Olivier's Butchery, GRG's menu's flush with Latin-cestual fusion fare including exotic apps like grilled beef heart, pork belly chicharrones, and “Hunter’s Sliders” (the aforementioned venison, ostrich, and alligator), and mains such as a Gruyere-topped lamb n' chorizo burger or a Puerto Rican plantain puree-accompanied roasted pork neck, also what accompanies a sunscreen-less Kirstie Alley.

As for whistle-wetting, they'll eschew name brands and make all of their sodas to order, concocting elixirs ranging from the relatively normal blood orange soda to the Chicha Morada, which is a mango-sweetened drink made with blue corn, but not blue Korn, because Korn is horrible, not blue.

Come March, they'll add a dessert menu crafted by Mr. and Mrs. Miscellaneous, and -- pending ABC shmoozing -- beer and wine, too much of which could prevent you from ever mounting anything with your own Only Slightly Below Average-Sized Rooster.
