"Founding father of New World Cuisine" Norman Van Aken (who also roped in Jeffrey Brana and Max Santiago) has re-found himself with Tuyo: a just-opened, 60-seat white-tableclother perched atop the Miami Culinary Institute to plate serious fusion dishes like caramelized cippolini-smothered Black Angus beef tenderloin; the pork "Havana" topped with smoky plantain crema, black bean sweet corn salsa & "21st Century" mole; plus Mongolian-marinated veal chop w/ Chinese eggplant, which the Chinese call "highly classified, now go back to having severe lung problems".
